NOTE TO MYSELF: DO IT IN A HALF
Ingredients:

  • 1 cup oil (any, preferably olive oil)
  • 2 cups semolina flour (go to an Indian/Turkish store ask for sooji/semolina flour, much cheaper
  • 3 cups sugar
  • 4 cups water
  • 6 oz finely ground walnuts or pecans (optional, but trust me it’s much better)
  • 4 oz chocolate (optional, but trust me it’s much better)

Instructions:

  • Add one cup oil and 2 cups semolina in a pot and simmer on a medium heat for about 10 mins. Mix frequently.
  • After 10 mins you’ll see that when mixing, there is a “gap”, the oil doesn’t overrun.
  • Add 3 cups sugar, 4 cups water and stir quite frequently for 10 mins. If you want to add chocolate and/or walnuts, add them now. Stir another 5 mins, regardless if you added chocolate/walnuts or not. Halva will thicken and you know it’s over when there is a “gap” when mixing. Halva will separate from the walls of the pot and it’s quite thick.
  • Transfer to 9×13 pan. Flatten the surface, let it cool completely, put in a fridge overnight.
