Ingredients:

  • 1 cup firmly packed fresh parsley, no stems, about 0.75oz or 20 grams
  • 3-4 garlic cloves, depending on size
  • 2 teaspoons dried oregano
  • 5 Tbsp oil
  • 2 Tbsp vinegar
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/2 tsp red pepper flakes

Instructions:

  • Combine all dried ingredients in a food processor. You can finely chop the parsley/garlic if you don’t have a blender/food processor.
  • Blend so it looks like this. I use manual blender, 15 pulls.
  • Add oil and vinegar and pull extra 15 times. Looks like this.
  • Cover and let it rest for about 2hrs in fridge or room temperature. Enjoy after!
