Ingredients:

  • 5oz (150g) plain cookies Goya Maria Cookies
  • 3oz (100g) chopped or ground walnuts
  • 2.5oz (75g) candied fruit wedges
  • 2.5oz (75g) raisins
  • 1.5oz (50g) chopped dates
  • 1.5oz (50g) chopped dried figs
  • If you don’t want to use dates/figs, add 4oz (100g) more raisins
  • 1Tbsp cocoa powder
  • 1 stick/125ml butter
  • 1cup (125g) confectioners sugar
  • 3oz (50ml) milk
  • 5oz <150g> chocolate
  • 1/2Tbsp-1Tbsp neutral oil to use melt the chocolate
  • Optional: soak raisins in a shot of rum

Instructions:

  • Break cookies with hand like this in a 4qt+ bowl
  • Chop fruit wedges like this
  • Chop figs like this
  • Add the chopped/grounded walnuts, chopped candied fruit wedges, raisins and/or chopped dates/figs in the bowl with the cookies
  • Add the remaining ingredients, cocoa powder, melted butter, confectioners sugar and milk
  • Combine everything in the bowl and mix everything very well. Melted butter and milk helps mixing everything.
  • Melt the chocolate with about 1/2Tbsp-1Tbsp oil, until you see that the chocolate is compact and rolls around the pot uniformly
  • Spread the chocolate on a formed cake
