Ingredients:
- 5oz (150g) plain cookies Goya Maria Cookies
- 3oz (100g) chopped or ground walnuts
- 2.5oz (75g) candied fruit wedges
- 2.5oz (75g) raisins
- 1.5oz (50g) chopped dates
- 1.5oz (50g) chopped dried figs
- If you don’t want to use dates/figs, add 4oz (100g) more raisins
- 1Tbsp cocoa powder
- 1 stick/125ml butter
- 1cup (125g) confectioners sugar
- 3oz (50ml) milk
- 5oz <150g> chocolate
- 1/2Tbsp-1Tbsp neutral oil to use melt the chocolate
- Optional: soak raisins in a shot of rum
Instructions:
- Break cookies with hand like this in a 4qt+ bowl
- Chop fruit wedges like this
- Chop figs like this
- Add the chopped/grounded walnuts, chopped candied fruit wedges, raisins and/or chopped dates/figs in the bowl with the cookies
- Add the remaining ingredients, cocoa powder, melted butter, confectioners sugar and milk
- Combine everything in the bowl and mix everything very well. Melted butter and milk helps mixing everything.
- Melt the chocolate with about 1/2Tbsp-1Tbsp oil, until you see that the chocolate is compact and rolls around the pot uniformly
- Spread the chocolate on a formed cake
