Ingredients:

  • 600g potatoes
  • 200g ham
  • 100g shredded cheese
  • 340g frozen peas & carrots
  • 2 eggs
  • 100g pickles
  • 200g mayo
  • 2tsp salt, 2tsp pepper (optional)

Instructions:

  • Boil 2 x potatoes (600g) for about 30+ mins
  • Boil 2 eggs (hard)
  • Boil peas & carrots for 5-6 mins
  • In a bowl add, 100g shredded cheese, 200g chopped ham and 100g chopped pickles
  • Add boiled potatoes chopped and skinned, add chopped hard boiled eggs and the drained peas & carrots
  • Add salt/pepper and 200g mayo, mix well. Refrigerate for 4-5 days.
