Ingredients:
- 600g potatoes
- 200g ham
- 100g shredded cheese
- 340g frozen peas & carrots
- 2 eggs
- 100g pickles
- 200g mayo
- 2tsp salt, 2tsp pepper (optional)
Instructions:
- Boil 2 x potatoes (600g) for about 30+ mins
- Boil 2 eggs (hard)
- Boil peas & carrots for 5-6 mins
- In a bowl add, 100g shredded cheese, 200g chopped ham and 100g chopped pickles
- Add boiled potatoes chopped and skinned, add chopped hard boiled eggs and the drained peas & carrots
- Add salt/pepper and 200g mayo, mix well. Refrigerate for 4-5 days.
