Ingredients:
- 4 oz spaghetti
- 1 Tbsp olive oil
- 1/2 cup grated parmesan cheese (don’t use store bought grated parmesan)
- 1/4 tsp black pepper
Instructions:
- Boil spaghetti in 5 oz water in a pot. Put a 1/2 tsp salt in the water. The less water you use, faster to cook and starchier the water that we will need later. While the pasta is cooking, grate 1/2 cup parmesan cheese. I use this side of the grater.
- Once done (aim for al dente), put 1/4 cup of the water aside.
- Drain the pasta and keep it aside.
- In the same pot, add 1 Tbsp olive oil and 1/4 tsp black pepper. Saute for 10 seconds or less until you hear sizzling. Turn off the heat and wait a minute.
- Add the pasta, toss it a bit, add the 1/4 cup starchy water and add the grated parmesan. Toss everything together until the cheese melts.
