Ingredients:

  • 500g pork butt or some fatty boneless part chopped in 1cm cubes.
  • Marinate overnight in salt, pepper, paprika, 1 Tbsp mayo and 1 tsp mustard or some store bought marinade
  • 400g all purpose flour
  • 2 tsp instant yeast
  • 1 tsp salt
  • 2 Tbsp oil + 2 Tbsp oil for greasing the pan bottom
  • 200 ml water
  • 8 tsp lard (optional)


Instructions:

  • Add flour, yeast, salt, 2Tbsp oil and water in a bowl. Mix and knead.
  • Make a ball and let it sit for 1 hour in a 12″x16″ oiled pan (2 Tbsp oil).
  • After 1 hour, cut the dough in half, sprinkle some flour and let it sit for another 1/2 hour
  • Stretch the balls into rectangles so two fit the pan.
  • Add the meat on top, add 1 tsp or 1/2 tsp lard. Use 8, 12 is too much.
  • Bake on 400F for about 20-25 mins.
