Ingredients:
- 1 medium eggplant
- 6-8 cloves garlic
- olive oil and vinegar
- fresh parlsey
- salt, pepper to taste
Instructions:
- Slice the eggplant, 1/2 inch each slice.
- Saute them in a pan with olive oil
- …until golden brown. Eggplant is like a sponge. It takes a lot of olive oil.
- Move the sauteed eggplant slices to a container.
- Chop the parsley and the garlic.
- Add the chopped parsley and garlic.
- Add vinegar, so the eggplants are halfway covered.
