Ingredients:

  • 1 medium eggplant
  • 6-8 cloves garlic
  • olive oil and vinegar
  • fresh parlsey
  • salt, pepper to taste

Instructions:

  • Slice the eggplant, 1/2 inch each slice.
  • Saute them in a pan with olive oil
  • …until golden brown. Eggplant is like a sponge. It takes a lot of olive oil.
  • Move the sauteed eggplant slices to a container.
  • Chop the parsley and the garlic.
  • Add the chopped parsley and garlic.
  • Add vinegar, so the eggplants are halfway covered.
