Ingredients:
- 1 stick butter
- 1 cup sugar
- 2 large eggs
- 1/4 cup milk or 1/4 cup yogurt or 1/4 cup kefir or 1/4 cup water
- 1 tsp vanilla extract
- 3 very ripe bananas
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/2 cup chocolate chip or 1/2 cup walnuts/pecans (optional)
- 1/4 tsp salt
- 1/2 tsp cinnamon
- cooking spray
Instructions:
- Melt the butter in microwave for 30 seconds and add it in a bowl with 1 cup sugar. Mix well manually or with a beater
- Add 2 eggs, mix well again
- Add milk/water/yogurt and vanilla extract, mix well
- Add 3 ripe bananas, mash
- Bring to this consistency, chunks and lumps here and there
- In another bowl, mix the dry ingredients: flour, baking soda, salt, chocolate chips and/or walnuts and cinnamon. Mix well because of the next step.
- Transfer the dry mix in the first bowl with the batter. Do not overmix, just slightly so you can’t see the flour anymore. Even if you see some flour here and there, it’s OK
- Grease a 9×5 baking pan and add parchment paper so it looks like this.
- Transfer the batter in the pan and flat the top
- !!! BAKE ON THE LOWER 1/3rd of the rack on 350F for 50-60 mins. Use toothpick to check if done.
- When it looks like this, turn off the oven but leave the pan there with the oven door open for 1 hr
- Cut in slices, keep in an airtight container for 3-4 days or freeze the slices separately.
