Ingredients:
- 3/4 cup sifted flour or 90g
- 3/4 tsp baking powder
- 1/4 tsp salt
- 4 eggs, room temperature
- 3/4 cup or 150g sugar
- 1 tsp vanilla extract
- 1 cup (340g) jam or marmalade
- confectioner’s sugar
Instructions:
- Mix thoroughly flour, baking powder and salt in a small bowl
- In a large bowl, beat the eggs for a minute until the volume increases
- Slowly add sugar while beating the eggs for another 5 mins. The consistency should be like this.
- Add the vanilla and mix for another 10-15 seconds
- Slowly add the flour mix and using spatula fold over. Do not mix it to much!
- Put a parchment paper, slightly grease it including sides and pour the batter into 10″ x 15″ pan
- Bake on 400F from 10-15 mins, it should be spongy on touch and light brown
- On a clean towel sprinkle some confectioner’s sugar
- Flip the pan, remove the parchment paper and roll the cake using the towel. The towel should be inside the roll, it’s fine.
- Rest on a rack until completely cool.
- Unroll, spread the marmalade, sprinkle confectioner’s sugar and roll back. Wait for a couple of hours, better overnight.
