Ingredients:

    Dough

  • 8 whites
  • 100g sugar
  • 2 Tbsp flour
  • 200g grounded walnuts
  • 1 tsp baking powder
    Filling 1

  • 8 yolks
  • 100g sugar
  • 100g chocolate
    Filling 2

  • 125g butter
  • 50g powdered sugar
    Glaze

  • 100g chocolate
  • 1.5Tbsp vegetable oil

Instructions:

  • Mix the egg whites, slowly add sugar. Mix for 5-7 mins with electric mixer.
  • Add the flour, baking powder and then the walnuts.
  • Mix manually with spoon or whatever.
  • Put a parchment paper in 12″x26″ pan including sides. You can lightly grease the bottom and sides with vegetable oil spray (optional).
  • Transfer the mix and flat with spatula or spoon.
  • Bake on 375F for 15 mins. Lightly brown and spongy on touch.
  • Remove the parchment paper, cut in 4 pieces. Set aside.
  • You need a double-bottom pot for this. Mix 8 yolks and 100g sugar with an electric mixer.
  • Put it on top of a bigger pot with a boiled water at the bottom (2 fingers high)
  • Cook and mix constantly for 12-15 mins adding the chocolate 2-3 minutes before it’s over.
  • Once done, let it set aside for 20-30 mins.
  • Mix 125g butter and 50g powdered sugar.
  • Add the chocolate/yolk mix to this. Mix well.
  • Spread the mix on top of each dough and layer them. Do this 3 times for the whole chocolate/yolk/butter mix. Do not put this on the 4th dough.
  • Melt 100g chocolate and 1.5Tbsp oil in a microwave. Spread on top. Decorate (optional)
  • Leave in the fridge for at least 12hrs
