Ingredients:

  • 1 cup heavy cream
  • 8oz mascarpone cheese
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1 cup coffee or espresso
  • 1 small shot of coffee liqueur (optional)
  • 24 lady fingers
  • cocoa for dusting

Instructions:

  • Beat the heavy cream on medium, slowly add sugar after it’s getting heavier.
  • Beat more and add vanilla almost at the end.
  • When it’s done, add mascarpone but fold it until well combined, no need to beat.
  • Put the coffee in a plate or shallow pot.
  • Dip quickly each lady finger on both sides horizontally in the coffee.
  • Line them up in 8″x8″ pan. About 12.
  • Add half of the cream/mascarpone mix, spread evenly.
  • Do another round of dipped lady fingers on top.
  • Spread the remaining mix.
  • Dust with cocoa.
