Ingredients:
- 1 cup heavy cream
- 8oz mascarpone cheese
- 1/3 cup sugar
- 1 tsp vanilla extract
- 1 cup coffee or espresso
- 1 small shot of coffee liqueur (optional)
- 24 lady fingers
- cocoa for dusting
Instructions:
- Beat the heavy cream on medium, slowly add sugar after it’s getting heavier.
- Beat more and add vanilla almost at the end.
- When it’s done, add mascarpone but fold it until well combined, no need to beat.
- Put the coffee in a plate or shallow pot.
- Dip quickly each lady finger on both sides horizontally in the coffee.
- Line them up in 8″x8″ pan. About 12.
- Add half of the cream/mascarpone mix, spread evenly.
- Do another round of dipped lady fingers on top.
- Spread the remaining mix.
- Dust with cocoa.
