Ingredients:

  • 4 quinces
  • 1.2kg sugar
  • About 1l water
  • 1 lemon


Instructions:

  • Peel the quinces
  • Grate them and dump the shreds in a pot of cold water
  • Add 1.2kg sugar and about 1l water so the water covers the sugar (1 finger over)
  • Boil until the mix becomes translucent and a lot of bubbles (about 7-10 mins)
  • Add shredded quinces and cook uncovered for another 30 mins on medium/medium-low
  • Test: get a teaspoon, leave on a plate for about 15 seconds and check the consistency. The preserve should not be liquid. Kinda standard honey consistency.
  • Add the lemon juice, mix and remove from the heat.
  • Cover with wet towel and wait for 10-15 mins.
  • Add to jars.
