Ingredients:
- 2Tbsp oil
- 1/2 onion, chopped
- 1/2 bell pepper, chopped
- 2-3 garlic cloves, chopped
- 14oz can diced tomatoes
- 3-4 large eggs
- 1tsp harissa spices or paprika
- 1/2 tsp cumin (optional)
- salt, pepper to taste
- parlsey for decoration
Instructions:
- Saute onions and peppers with 2Tbsp oil until soft and translucent
- Add garlic and cook for another 2-3 mins
- Add the tomatoes and spices, cover and simmer for 20 mins
- Create a hole in the sauce with the spatula and add the eggs in each hole
- Cook covered for another 3-5 mins for runnier or firmer yolk
- Garnish with parsley
