Ingredients:

  • 2Tbsp oil
  • 1/2 onion, chopped
  • 1/2 bell pepper, chopped
  • 2-3 garlic cloves, chopped
  • 14oz can diced tomatoes
  • 3-4 large eggs
  • 1tsp harissa spices or paprika
  • 1/2 tsp cumin (optional)
  • salt, pepper to taste
  • parlsey for decoration


Instructions:

  • Saute onions and peppers with 2Tbsp oil until soft and translucent
  • Add garlic and cook for another 2-3 mins
  • Add the tomatoes and spices, cover and simmer for 20 mins
  • Create a hole in the sauce with the spatula and add the eggs in each hole
  • Cook covered for another 3-5 mins for runnier or firmer yolk
  • Garnish with parsley
