Ingredients:
- 4 quinces
- 1.2kg sugar
- About 1l water
- 1 lemon
Instructions:
- Peel the quinces
- Grate them and dump the shreds in a pot of cold water
- Add 1.2kg sugar and about 1l water so the water covers the sugar (1 finger over)
- Boil until the mix becomes translucent and a lot of bubbles (about 7-10 mins)
- Add shredded quinces and cook uncovered for another 30 mins on medium/medium-low
- Test: get a teaspoon, leave on a plate for about 15 seconds and check the consistency. The preserve should not be liquid. Kinda standard honey consistency.
- Add the lemon juice, mix and remove from the heat.
- Cover with wet towel and wait for 10-15 mins.
- Add to jars.
