Ingredients:
- 250g leeks
- 500g olives (pitted are much better, but not the ones in a can)
- 3/4 cup vinegar
- 1/4 cup oil, do not use EVOO it will harden in the fridge, some neutral like sunflower or avocado, maybe regular olive oil


Instructions:
- Slice the leeks vertically and chop the pieces in half horizontally so the leaves can separate
- Wash them very thoroughly, very!
- Mix everything in a big bowl making sure that leeks separates as much as possible
- Transfer in 3 x 16oz containers, put in a fridge for at least a day. Much better after 2 days.
