Ingredients:

  • 1 lb thin fillo dough, I use Apollo #4
  • 5 eggs
  • 12 oz feta cheese
  • 8 oz yogurt or kefir (this is better)
  • 1/2 tsp baking powder
  • 5 oz vegetable or olive oil
  • 5 oz club soda or carbonated mineral water
  • 8 oz frozen chopped spinach, defrost a bit before cooking

Instructions:

  • In a 3-4 qt bowl, mix 5 eggs, 12 oz crumbled feta cheese.
  • In 8 oz yogurt or kefir, add 1/2 tsp baking powder and mix. Add this into the bowl with the eggs and feta cheese.
  • Add 5 oz oil and the 5 oz club soda into the bowl and mix well.
  • Add the chopped spinach.
  • Get one fillo dough sheet, crumble it a little bit so it fits your palm, let’s say the size of shower puff.
  • Dunk it into the bowl, roll it and scoop a bit of the mix. You have about 22 sheets, so use your judgement.
  • Add the dough in a 9″ x 13″ pan. No need to oil the pan.
  • Once you finish with the dough, add the remaining mix on top (if any).
  • Bake on 400F for about 25-30 mins. Cut into squares and serve.
