Ingredients:

  • 2 idaho potatoes, medium size (650g)
  • 2 eggs
  • 150g onion (half large)
  • 150g mayo
  • 60g mustard
  • 15g vinegar
  • 5g parsley
  • 1/2tsp salt, 1/2tsp pepper


Instructions:

  • Boil potatoes for 35 mins, peel, cut in cubes.
  • Shred or finely chop the hard boiled eggs.
  • Add onions so it looks like this.
  • Add everything, mix and don’t break up the potatoes.
