Ingredients:
- 450g flour
- 100g coconut flakes
- 250g butter / 2 sticks
- 600g sugar
- 2 eggs
- 1Tbsp baking powder
- juice from half a lemon
- 2 Tbsp oil
Instructions:
- Add flour, coconut flakes, melted butter, 2 eggs, baking powder. No sugar.
- Mix with hands and form patties.
- Put them in an oiled pan. Use a grate to press slowly the tops so it looks like this
- Bake on 350F for 20-25 mins. When done set outside oven..
- Bring 500g water and 600g sugar to boil on high. Once sugar dissolves, boil until small bubbles appear, 10mins total from beginning.
- Once done, add the lemon juice and set aside for 10 mins.
- Add the simple syrup in the pan. Let it cool at room temp for 12 hrs.
- Rotate half way thru so both sides soak the syrup.
