Ingredients:

  • 450g flour
  • 100g coconut flakes
  • 250g butter / 2 sticks
  • 600g sugar
  • 2 eggs
  • 1Tbsp baking powder
  • juice from half a lemon
  • 2 Tbsp oil

Instructions:

  • Add flour, coconut flakes, melted butter, 2 eggs, baking powder. No sugar.
  • Mix with hands and form patties.
  • Put them in an oiled pan. Use a grate to press slowly the tops so it looks like this
  • Bake on 350F for 20-25 mins. When done set outside oven..
  • Bring 500g water and 600g sugar to boil on high. Once sugar dissolves, boil until small bubbles appear, 10mins total from beginning.
  • Once done, add the lemon juice and set aside for 10 mins.
  • Add the simple syrup in the pan. Let it cool at room temp for 12 hrs.
  • Rotate half way thru so both sides soak the syrup.
