Ingredients:
- 2 idaho potatoes, medium size (650g)
- 2 eggs
- 150g onion (half large)
- 150g mayo
- 60g mustard
- 15g vinegar
- 5g parsley
- 1/2tsp salt, 1/2tsp pepper
Instructions:
- Boil potatoes for 35 mins, peel, cut in cubes.
- Shred or finely chop the hard boiled eggs.
- Add onions so it looks like this.
- Add everything, mix and don’t break up the potatoes.
