Ingredients:

  • 100g cup pimento olives
  • 50g cup black pitted olives in oil
  • 50g giardiniera
  • 2Tbsp olive oil
  • 1Tbsp vinegar
  • 1tsp dried oregano or basil
  • 1/4tsp black pepper

Instructions:

  • Get the ingredients and discard any liquids at the bottom
  • Chop well or slice and mix everything.
  • Leave for a couple of hours
  • Serve on a bread as a spread and layer 3:1 ratio of meat and cheese
    • Soppressata, salami or pepperoni
    • Mortadella or bologna
    • Capicola or prosciutto
    • Provolone
