Ingredients:

  • 2 stalks leeks
  • 1 cup baby carrots sliced horizontally
  • 20 small cooked frozen meatballs
  • 4 bouillons or whatever for 2qt water
  • 2qt water
  • 1/2 cup ditalini pasta (optional)
  • 1Tbsp paprika sweet or hot
  • 3Tbsp flour
  • 2Tbsp butter

Instructions:

  • Bring to a boil water, bouillons and leeks
  • Once it starts boiling, simmer for 20 mins
  • Add pasta and carrots, cook/simmer for another 10 mins
  • Add meatballs, cook/simmer for 2-3 mins
  • In the meantime, mix paprika and flour, add the soup liquid for about 3Tbsp, mix so it has honey consistency.
  • If you add one Tbsp at a time and liquid and mix it’s much easier to break down the lumps.
  • Eliminate all flour lumps add another 2-3Tbsp, mix well, put it back in the pot.
  • Add 2Tbsp butter, mix everything well.
  • Cook simmering for another 30 seconds.
