Ingredients:
- 12 ounces dried figs, I use these from Amazon
- 2 cups sugar
- 2 cups orange juice – NOTE: 2 medium oranges give about 1/2 – 1 cup, make sure you have 2 cups regardless if it’s freshly squeezed or from concentrate
- 3Tbsp vinegar – yes, vinegar
- 2Tbsp fresh lemon juice – this is about half a lemon but it depends, make sure is 2Tbsp
- Finely grated zest from 2 oranges
Instructions:
- Chop the dried figs in quarters
- Mix figs, sugar, orange juice, apple cider vinegar and lemon juice in a medium-large saucepan over medium heat.
- Bring to boil, then rolling simmer. Mix every 2-3 mins or so.
- Cook for 15 mins, it will still look very liquid. Then pulse blend everything with immersion blender, the jam will thicken immediately.
- Cook for another 5 mins, add zest, mix well, wrap up.
- You’ll get around 750g jam.
- Boil jars for 15 mins and wash with soap lids.
