Ingredients:

  • 1 chicken breast, chopped, marinated in EVOO and spices
  • 4 cups water
  • 2 cubes bouillon
  • 1/2 cup chopped carrots
  • 1/2 cup ditilini pasta
  • Extra virgin olive oil

Instructions:

  • Coat chopped chicken and marinate with 2-3Tbsp EVOO for 3-4 hours
  • Add 4cups water, chopped carrots and bouillon and bring to boil
  • Once the water starts boiling, add the pasta
  • Saute marinated chicken with some EVOO
  • Add about a cup of the soup liquid into the pan with the chicken, when the chicken is done and boil for 30secs to a min to get all the grease
  • Transfer back everything in the pot
  • Cook until pasta is done, 10 mins for ditilini pasta.
