Ingredients:

  • Re-do the recipe, a lot of pepper skins with this one. Try roasting them first, then peel.
  • 500g sausages
  • 4 peppers
  • 1 large onion
  • 3-4 garlic cloves
  • 1Tbsp-2Tbsp oil
  • salt, pepper, spices


Instructions:

  • Chop the onion and separate the layers so it looks like this.
  • Slice the peppers in thin strips.
  • Add 1Tbsp oil into the pan. Saute the sausages. You don’t have to cook all the way through. Just make sure they are browned up/down. Don’t worry about the sides.
  • Remove the sausages. Add peppers and onions. Add 1Tbsp oil and mix well. Simmer peppers and onions. It takes time maybe 15-20 mins covered.
  • Add sausages (whole or sliced) back and add garlic, then cook uncovered for another 15-20 mins. Simmering covered makes the peppers and onions taste like boiled, so cook the rest uncovered so they have the charred taste. Make sure there is no liquid and the garlic doesn’t burn, so easy on temp.
